Fruit Explosion Bran Muffins

I just want to start this post off by saying … you’re welcome to your digestive systems. In our household these muffins have a very different name, but I figured I should keep it classy for the blog. So Fruit Explosion Bran Muffins it is.

These muffins are great as a healthy dessert, breakfast, or snack throughout the day. Really they are just so versatile and extremely enjoyable at all hours of the day. The only challenge … try not to eat them all at once.

Personally I am not a big fan of sweet food/dessert. My flavour profile is ALL about those savoury foods, so I’ve made sure to minimize the sugar in this recipe and really let the natural sweetness of the bananas and fruits take over. Plus that nutty flavour from the wheat bran … OOOO … don’t get me started. I need to pause this post and go make some right now.

What Do You Need?

  • bananas

  • coconut sugar

  • eggs

  • avocado oil (or grapeseed oil)

  • flour

  • wheat bran

  • baking powder

  • baking soda

  • fruits (blueberries, strawberries, peaches, or any other fruits you like)

  • walnuts (sub for pecans or skip entirely)

Tips:

  • The darker and mushier the banana … the better! You know the stage where the fruit flies starting hovering around the bananas when they need to be thrown out? That’s when you know its time to make these muffins. It adds so much natural sweetness to the muffins, and gives them that extra “moistness”. If you make these with perfectly ripe bananas, I find they turn out much drier.

  • Choose fresh fruit over frozen fruit. This also effects the consistency of the muffins, and in my oh so professional opinion, fresh is ALWAYS better.

  • If the mixture looks dry after combining all the ingredients in Step 2, add some more oil - a tablespoon or two.

  1. Turn oven to 350ºF
  2. In a deep large bowl place bananas, eggs, wheat bran, flour, sugar, baking soda, baking powder, and oil together and mix on high speed. 
  3. Place washed fruits and crushed walnuts in the bowl and mix by hand. (For peaches, pineapples, and strawberries, cut them up in small pieces)
  4. Line muffin tray with baking cups and fill almost to the rim.
  5. Place in oven for 35 minutes.
  6. Remove and allow to cool for 10 minutes.
  7. To store, simply cover with tinfoil.
